All Natural CocoPops with Added Superpowers!

There is nothing better than a crunchy sweet chocolate breakfast cereal for those young and young at heart, but why not try this recipe with a wholesome twist? Swapping puffed rice for buckwheat creates a dense serving of micronutrients and switching sugar and cocoa powder for raw organic cacao powder and a natural form of sweetness like honey or date syrup, adds a rich source of antioxidants.

For those looking to add some additional SUPERPOWERS to this recipe you might like to consider;

Flax meal (high in fiber) for happy tummies 🤜

Chia seeds (high in protein) for strong muscles 💪

Hemp seeds (high in Omega 3s) for supersonic brain power 🧠


Ingredients

2 cups organic buckwheat

1 cup coconut flakes

¼ cup cacao powder

½ teaspoon sea salt

1 teaspoon vanilla extract

1/3 cup of honey (or your preferred choice of sweetness; Rice malt syrup, maple syrup or date syrup)

¼ cup of coconut oil


Optional SUPERPOWER ingredients;

2 tablespoons flax meal

2 tablespoons chia seeds

2 tablespoons hemp seeds



Instructions

  1. In a large mixing bowl mix together all the dry ingredients; buckwheat, coconut, cacao, sea salt.

  2. In small saucepan heat the coconut oil, adding honey or your choice of sweetness as well as vanilla extract. Stir until well combined.

  3. For those with an oven in their galley now is the time to prepare that baking tray with baking paper, mixing the wet and dry ingredients together and spreading over the trays to bake on 180c/350f for 15 minutes, stirring half way through.

  4. Not oven? Fear not- this recipe can easily be made on the stove top. Simply bring a large fry pan to medium heat pouring both the wet and dry ingredients together and stirring continuously until well combined and slightly toasted- approximately 5-10 minutes.

  5. Allow to cool before adding to an air-tight container for storage.

  6. Serve with some fresh fruit, coconut yogurt and your preferred plant-based milk for a completely wholesome breakfast.

Makes approximately 4 cups, or 8 serves.
