Sourdough Crepes

If you're onboard with our Seaside Sourdough and have read our Sourdough Starter Care Guide, you may find yourself with excess 'active' starter after you've fed it. These crepes are a quick, delicious and healthy way to use up the excess starter as well as have breakfast. We often find ourselves deliberately over-feeding our starter to make sure we've got enough for crepes!

Sourdough Crepes


Ingredients

1 cup 'active' sourdough starter*

1/4 cup flour-plain or wholemeal

2 eggs or equivalent egg substitute (Flax Eggs work wonders here)

1 teaspoon vanilla essence

1/4 cup milk of your choice

A little butter/oil for the pan



Instructions

  1. Combine all ingredients in a bowl, whisking well to combine.

  2. Heat a non-stick pan with 1/4 teaspoon of butter over medium heat. You can also try coconut oil but I find it can make the pan too slippery when you're spreading the crepe.

  3. Pour about a 1/4 cup of batter into the pan and swirl to coat the base of the pan and form a nice thin crepe.

  4. Cook for a minute or so each side, then place on a plate with another plate on top to keep warm while you cook the remainder of the crepes.

  5. Enjoy with any toppings you desire! We recommend homemade greek yoghurt, honey and shredded coconut, or fresh fruit if your provision stocks allow it!

*Note: How to check you sourdough starter: you'll be able to check that it's active by popping a teaspoon of starter into a cup of water - if it floats, it's active and ready to go!
